“Pasta Best”? Only getting started!”
Scoil’s u12’s have been wintering well and to start the ball rolling for 2021 (hopefully their first year playing leagues) we started at the start. What comes before training and matches? Energy, that’s what. The lads got the inside track on rocket fuel from none other than Senior Scoil hurler and diet expert Barry Cushen. Barry shared his secret match day recipe; a Pasta Bake handed down for generations of his family, right from when his Italian great grandparents washed up on Tramore beach after taking a wrong turn on the way to Sardinia. The lads not only cooked the meal for their families last Thursday, they also learned all about the nutritional benefits of protein, carbs, and spinach!
As you can see below, what they produced was a spectacular success. Lads, remember to get ready for the return to training which, fingers crossed, won’t be too far off.
For those interested, the recipe is below (I hope Barry doesn’t mind us sharing – just don’t let it outside Scoil folks!).
Ingredients
400g dried pasta… any shape (not spaghetti)
300g cooked chicken
1 onion chopped
2 cloves garlic
1 red pepper sliced
1 teaspoon oregano
75g spinach or peas
Jar of tomato sauce (passata)
3 spoons Mascarpone cheese or natural yogurt
100g Mozzarella or low-fat grated cheese
Method
- Boil pasta. Rinse with cold water. Put in a bowl.
- Fry chicken, garlic, onion, and pepper. Add to the bowl.
- Add rest of the ingredients to the bowl (except the grated cheese). Add a pinch of salt and pepper and stir.
Mix ingredients and transfer to the covered oven-proof casserole dish. Bake for 20-25 minutes @180C.
Remove from oven and sprinkle over the grated cheese. Return to oven uncovered for another 5 minutes.
Thanks to Cormac Moran, John Kelly, Barry Cushen, all involved in the team and especially the U12’s Master Chef’s!

Webinars & Scoil Hoppers Nursery
Art Competition
Lots happening throughout the club, including the Communications Webinar, that was a massive success; organised by Thomas Gleeson, Games Promotions Officer, and Johnny Rock, Senior Ladies Manager. Great turnout with 24 participants in attendance on-line. This was the opening webinar on Communications and the next Webinar is on Session Planning – Getting the most out of the time we spend with the players. Save the Date: Wednesday 10th March at 7.30 p.m. and Thomas indicated that this session is probably one of the most important sessions from a coach’s perspective.
Scoil & O’Connell’s Hoppers Nursery on-line session had strong numbers and the Art Competition is a major hit with the youngsters. Well done to all involved.
Congratulations OCS Primary School
Our friends at OCS Primary School, we offer heartfelt congratulations on an excellent Bloody Sunday video produced by the pupils. Bloody Sunday video – OCS Primary won 1st place in Ireland and this is indeed good news.
